In my continuing efforts to be unpredictable (which is just a nice way of saying inconsistent or unreliable), I’ve decided to try something different today: a recipe! Don’t worry, I’m not turning this into a recipe blog. However, baking is something that I do really enjoy, so I may share some recipes here from time to time.
The following is a recipe for Nutella chocolate pudding cookies, which are just as delicious as they sound. They’re also incredibly chewy and highly addictive, especially when fresh from the oven. Don’t say I didn’t warn you.
3/4 cup butter*
1/2 cup Nutella
1/2 cup granulated sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 3.4oz (~110g) box chocolate pudding mix
2 cups dark chocolate chips
*You’ll want to leave the butter on the counter for about 45 minutes before starting so it can soften a bit.
Preheat the oven to 350º and line a baking sheet with parchment paper.
In a large mixing bowl, add the butter, Nutella, sugar, and brown sugar and beat until evenly mixed. Add the eggs and vanilla extract and mix again. Add the flour, baking soda, salt, and pudding mix, then stir briefly to begin mixing in the dry ingredients. Use a hand mixer to fully combine, being careful not to send flour and pudding mix flying everywhere. Stir in the dark chocolate chips by hand.
Drop by tablespoons (or balls approximately 1″ in diameter) onto the baking sheet and bake for 8-10 minutes or until the edges begin to darken. Remove from the oven and immediately sprinkle with granulated sugar. Leave cookies on the baking sheet to cool for 5 minutes before transferring to a wire rack.
Store in a sealed container for 4-5 days. Yields 4 dozen cookies.
